I had a fantastic weekend spent with just the right combination of excitement mixed with some laziness. I had an eventful evening downtown Indianapolis catching up with the girls, riding the bull & ending our night at Steak and Shake.
Since this past weekend was cold with gray skies I pulled out my leather jacket and tights hoping this would be the last weekend for having to dress warm.
I love weekends that have a balance with some activities and some periods reserved for doing nothing (like napping, sitting in front of the TV, reading, and playing games on my iPad).
After the eventful night Friday I spent Saturday being lazy and bumming around the apartment all day with Meredith. We caught up on some sleep, ran some errands & finished season one of Nurse Jackie.
Sunday was a much more productive day and it started to warm up. I pulled out the tennis shoes went for a run outside, worked out, & sat in the Sauna!
Sunday night Jake and I made red potatoes and Jambalya for dinner. We used a recipe that I found of Pinterest and we will definitely be making it again!
2 lbs of red potatoes, (1 ounce) packet Hidden Valley Ranch dressing/ seasoning mix 1/4 cup vegetable oil Directions: Preheat oven to 450 degrees F. Line a baking sheet with foil, then spray with non-stick spray. Place the cut potatoes into a large bowl. Sprinkle with Ranch seasoning, and then pour the oil over the top. Toss to coat the seasoning and oil all over the potatoes. Pour potatoes onto the prepared baking sheet and cook for 40 minutes
