Mini Pizzas

If you’ve been following for long, you know that I have a slight obsession for all things pizza related.

Pizza bites, pizza muffins, pizza Panini’s, pizza pasta, pizza chicken, you name it I have probably tried it but my absolute new favorite small food pizza meal has to be these mini pizzas. They’re quick and easy to make and a fun way to try lots of different toppings.

These would be great for a summer party – you could even toss these little guys on the grill if you don’t want to heat up your house.

After greasing a baking sheet the first step is to cut your pizza dough into circles.

Choose a bunch of toppings: I went with stuff I had in the fridge but you can get creative (mozzarella, tomatoes, pesto, peppers, onions, jalapenos, pepperoni, pineapple).

Ingredients
  • Pizza Crust (I used store bought and cut into circles)
  • Sea salt and freshly ground pepper, to taste
Topping Option #1: Tomato Pesto
  • 1 cup cherry tomatoes, sliced in half
  • Mozzarella cheese
  • 2 tablespoons pine nuts
  • pesto
Topping Option #2: Pepper
  • fresh mozzarella
  • 1/2 cup red pepper diced
  • 1/2 cup green pepper diced
  • 1/4 cup onion
Topping Option #3 Jalepeno
  • fresh mozzarella
  • ¼ cup crumbled feta cheese
  • 1/4 cup mushroom
  • 1/4 cup jalapeno

Instructions
  1. Preheat the oven to 350 degrees
  2. Assemble  pizzas with toppings of your choice.
  3. Bake for 12-18 minutes or until the cheese is melted. Drizzle with olive oil if you like and enjoy!
