Friday Favorites

 

Happy Friday, Friends! My weekends are usually a mix of the following: exploring new destinations (traveling or visiting somewhere other than Indy), exercising (workout classes, walks, or going for a run), relaxing (drinking, eating, & spending time with friends)  and house related to-dos (organizing, cleaning, laundry, grocery store, etc.).

This weekend I couldn’t be more excited to spend the entire weekend at home. We have had such a busy summer with weekend travel and weddings that we are looking forward to a relaxing weekend at home. It’s going to be so nice to wake up in my own bed!

Zucchini Pizza Bites

These Easy Zucchini Pizza Bites are a healthier way to fix a pizza craving! All the pizza flavors without all the extra carbs.I made these on a whim tonight for dinner and I must say they are delish, quick and such an easy recipe!

The zucchini rounds were so great for portion control & way less calories than eating an actual slice of pizza. You can also control the amount of cheese to top off – if you’re really watching your calories, a little bit goes a long way. You can use the mini pepperonis which make these even more fun to eat.

INGREDIENTS

2 small zucchini, cut into ¼” rounds
1 cup spaghetti sauce
1 cup shredded mozzarella cheese
½ cup mini pepperoni
3 tablespoons grated Parmesan cheese

DIRECTIONS

Preheat oven to 375 degrees F. Spray a baking sheet with cooking spray. Place zucchini in a single layer on baking sheet. Top each round with spaghetti sauce, mozzarella cheese, 3 pepperoni and Parmesan cheese.
Bake for 8-10 minutes or until cheese is melted and heated through.

Greenville, SC


Last weekend we had the privilege of attending my cousin Casey’s wedding in Greenville, SC. It was great being able to celebrate the beginning of their life together as husband and wife, traveling to a new city and spending time with family that I rarely see.  Everything about their wedding was absolutely amazing their venue, family, friends, and all of the festivities leading up to the big day.

The fun began on Friday as soon as we landed in Greenville spending the day exploring downtown Greenville. The main strip goes on for miles with tons of galleries and cute shops, so we browsed through those. We didn’t plan on shopping but when Jake came to the realization that he forgot to pack a pair of pants for the weekend we had no choice but to shop. After a lot of walking and exploring we had a couple drinks and lunch at Ale House. In the evening we made our way to the welcome party at Larkins on the River and ended the night at Sully’s Steamers for some delicious late night bagel sandwiches.

On Saturday the wedding festivities began around 3:00. The shuttle picked us up at our hotels and off we went to celebrate Casey and Solomon. The ceremony location was JAW. DROPPING. The Cliffs at Glassy Chapel was an awe-inspiring, panoramic view of Blue Ridge foothills and mountains, overlooking the green valleys, what a view! The reception was equally exquisite, held at Cliffs of Mountain Park. This fresh, fall, rustic, and classy wedding was incredible to be a part of!

 

Favorite Fall Pieces

It is still in the 80’s here in Indiana but I am itching for Fall weather! It’s mid September it has to cool down here soon, on that note I got inspired to think about what my absolutely favorite most-worn fall clothes are. Hope you enjoy!

Leather Jacket– A good leather jacket is a great closet staple. If you get a really good classic one – it can last forever. It can be dressed up or be super casual. I love to wear mine with jeans and a t-shirt but it looks equally great over a dress.

Plaid Scarf-I love how much a scarf can add interest & complete a basic outfit.

Cable Knit Sweater – I wear sweaters all. the. time. I own a light weight and a heavy weight version. And the light weight one is fantastic for Fall. It’s a wonderful basic.

Striped Shirt-Striped shirts are all day every day my favoritest kind of shirt there is. Under cardigans for work, with shorts to the park or with comfortable pants to travel. Forever chic and cute.

Military Jacket– I love it most with jeans and a t-shirt but also with dresses too!

Ankle Boot-I think they are super cute and stylish.

Plaid Shirts-The classic fall staple – the plaid shirt.

Skinny Jeans-Great in fall for tunic shirts, sweaters layered with button ups and tanks with cozy flowy cardigans. Cute with riding boots, ankle boot or flats. Yay jeans!

Drapey Cardigan-I love a cozy cardigan for fall an easy layer like a cardigan is great for adjusting to the swinging temps.

BBQ Ranch Chicken Salad

It’s time for another salad and boy do I have a tasty one for you, a BBQ chicken ranch salad! This salad is a southwestern twist which uses BBQ chicken, avocado, corn and black beans. This is definitely a salad that eats like a meal and given that it takes less than 30 minutes to make, it’s perfect for light easy dinners! I used my favorite sweet baby rays and hidden valley ranch but feel free to use your favorites, it will be delicious either way! If it’s a nice day head outside and grill the chicken and corn…yum!

Ingredients

1 tablespoon olive oil
2 boneless, skinless thin-sliced chicken breasts
Kosher salt and freshly ground black pepper, to taste
3 cups spinach
1 Roma tomato, diced
3/4 cup canned corn kernels, drained
3/4 cup canned black beans, drained and rinsed
1/4 cup diced red onion
1/4 cup shredded Monterey Jack cheese
1/2 cup Avocado
1/4 cup Ranch dressing
1/4 cup BBQ sauce
1/4 cup tortilla strips

Instructions

Heat olive oil in a medium skillet over medium high heat.
Season chicken breasts with salt and pepper, to taste. Add to skillet and cook, flipping once, until cooked through, about 3-4 minutes per side. Let cool before dicing into bite-size pieces.
To assemble the salad, place romaine lettuce in a large bowl; top with chicken, tomato, corn, beans, onion avocado and cheeses. Pour Ranch dressing and BBQ sauce on top of the salad and gently toss to combine.
Serve immediately, topped with tortilla strips.

Improving your Health

Here lately I’ve been trying to put more of a focus on living healthily. It’s definitely not always easy for me, but I’ve found that making small, manageable lifestyle changes work so much better than going from one extreme to the other.

Here are some of the things I’ve been doing differently that I highly suggest for anyone interested in being a bit healthier, there is always room for improvement right?

DIET
Hydrate, Hydrate, Hydrate
Swap regular and diet sodas for fruit-infused water, La Croix is my favorite!
Change all of your grains from enriched white flour to 100% whole wheat
Instead of denying yourself certain foods and treats, just cut your portion sizes in half
Try to eliminate as much sugar and processed foods as possible

EXERCISE
Get moving! Always opt to walk instead of ride whenever you can, take the stairs!
Take up a sport or hobby that is physical but fun, like dance classes, volleyball, or hiking
Make it a goal to thoroughly clean one area of your house each day instead of coming home and relaxing all night. Remember to stretch!
Plan activities with friends and loved ones that include some form of physical exertion, like going for a walk and catching up
If you sit at a desk all day like me remind yourself to get moving once an hour, I make a lap around the office every hour to go to the bathroom and fill up my water bottle
Whenever you are out with your friends, dance 🙂

MENTAL HEALTH
Do something every day that truly makes you happy
Spend time with those you love and who love you most
Always try to see the positive in everything
Make taking care of yourself a priority
Get enough sleep
