Chicken Fried Rice

Who doesn’t like fried rice? It’s obviously a great accompaniment to Chinese food, but we enjoy it so much that we have learned it can easily be turned into a stand-alone meal. So when I have leftover protein — whether it’s shrimp, ham, ground beef, rotisserie chicken, or shredded pork — I know I’m just a pot of rice away from an easy dinner.

As far as vegetables go, feel free to throw in your favorites. We like the traditional carrots beans and peas, but I know lots of people might enjoy green onions as well.


  • Sesame oil
  • 1 tablespoon minced garlic (3-4 cloves)
  • 2 cups grated carrots (about 8 ounces)
  • 4 eggs, beaten
  • 2 cups frozen peas
  • 5 cups cooked rice
  • 1/3 cup soy sauce
  • 2 cups ground or shredded chicken or your choice or protein

Happy Monday, Folks! How is it the last week of October?

We had a great weekend celebrating my best friend’s birthday in Fountain square. We had Halloween appetizers, fall drinks, duck pin bowling (I won) & danced the night away downtown.

I am a huge fan of cheese balls, but have never actually made one! When I stumbled across this pumpkin cheese ball on the Food Network I knew it would go over well. I was right…everyone devoured the cheese ball. Best of all, it was soooo easy to make. Make sure you add these cheese ball to your fall appetizer list!

The Perfect Fall Cheese Ball


  • 16oz cream cheese, room temp
  • 2 cups cheddar cheese
  • 3 tbsp minced onion
  • 3 tbsp salsa
  • 1 tsp ground cumin
  • 2 cups nacho cheese chips, crumbled
  • top of 1 bell pepper for stem garnish

What an absolutely stunning and PERFECT day! Drew and Danyelle put so much effort into planning their wedding day, and it really paid off, as everything went off without a hitch. The weather was a little chilly, but that didn’t ruin anything. You just can’t beat the views at her Aunts gorgeous house! It truly was an honor to be a part of their wedding. Drew and Danyelle , I hope you had a fantastic honeymoon! Xoxo


Funny fact: when Jake and I moved in together back in May, we started our apartment search in Broadripple. partly because the idea of living near La Piedad excited us to no end, and also because it’s just a terribly fun and charming part of Indianapolis.

We looked at maybe eight different apartments in one afternoon, driving all around town. Finding a 2 bedroom in our budget in the neighborhood was pretty much impossible and I don’t really remember any of the apartments we saw other than the one we are in now because we loved the location so much.

The best part about it is being able to walk to all of the bars, restaurants, and even the grocery store. We’re happy to call it home & we’re so excited to have my parents come visit this past weekend.


Happy wedding week to this girl, my best friend of 26 years, my partner in crime, my rock & the one who has been there since day one! I’m thinking back on all of my memories with you… Family vacations to Tampa, Holidays, Birthdays, Purdue, breakups, movie nights, screaming at the top of lungs on road trips & our crazy off the wall dance workouts. Thinking back on how my life would not be the same without you & I cannot wait as you start your new adventure on Saturday with Drew Lewis!!! Love you both!

Oreo Brownies


2 boxes of brownie mix (+ ingredients on the box)1 package of oreos


1. Pre-heat oven to 325°.
2. Mix brownies according to package in a large bowl.
3. Line 13×9 pan with foil. Pour in half of the batter and then line bottom of pan with OREO’s. Pour the rest of the batter over the OREO’s.
4. Bake at 325 for 35-45 minutes or until a tooth pick comes clean.
5. Enjoy with a cold glass of milk!
