One Dish: Breakfast Casserole

I know i have blogged about breakfast casserole before but it is one of my weekend morning go tos. How many of you crave something above and beyond your typical yogurt, oatmeal or, more likely, cereal breakfast on the weekend? No work to be done and you can actually sit on the couch watch the news, drink coffee and eat a hot breakfast. 

Breakfast casserole is such a crowd pleaser, not to mention could not be simpler to make. Just brown some sausage, add eggs, milk, peppers and onion, throw in some potatoes or hash browns and  add shredded cheese to the top. Perfect for throwing together last minute.

BREAKFAST SAUSAGE CASSEROLE 

1 lb. sausage
6 eggs
1 green pepper
1 onion
2 potatoes 
2 c. milk
1 tsp. salt
1 c. sharp cheese, grated
Brown sausage and drain. Cut up one green pepper and an onion to add to the sausage. Beat eggs with milk and salt and add into skillet mixture, Cube 2 potatoes and microwave for 5 minutes. Once softened add into the skillet. Add cheese on top of the skillet mixture. Serve with ketchup.
