I never start one project at a time. No, I have to start 2,3,4….why, it’s just the way I work. I start millions of projects at once and then slowly finish each one. Over the weekend while I was visiting my parents up North my mom picked me up an old drawer at an antique store. My dad bought some colored chalk and surprised me with a little DIY project! (They’re the best) All i had to do was choose a nice paint color and the inside is painted with chalkboard paint, ta da! Now i will be on a mission to find cute sayings and quotes to change up the inside.

Monday Motivation


As women, we all go through the very same setbacks and funks ( self-doubt to exercise ruts and relationship woes). With tomorrow being the first day of October let’s try to focus this month on doing more of what makes us happy.

“I’m unhappy with my job, but I’m going to stick it out for another year.”

“I’ve fallen off the bandwagon with my exercise routine!”

I am sure many of these phrases have come out of your mouth a time or two. Not putting your happiness first is one of the worst things you can do for your spirit. October is the perfect time to starting changing your way of thinking. When we do things out of love, life gets that little bit easier.

Don’t put off what it is you truly want. It’s never ever to late to do what matters. October is your month to start making it happen, to get back on track or to choose a new track entirely!

Spinach Greek Yogurt Mac & Cheese

This week I have been a zombie. With how exhausted my body has felt from trying to fight off a cold, I decided to look for an easy dinner idea on Pinterest! A couple weeks back I made the Greek Yogurt Chicken Bake and last night I attempted the greek yogurt mac and cheese with basically the same ingredients as the chicken recipe. This mac and cheese was totally comforting and creamy, and not totally bad for you.

Spinach Greek Yogurt Mac & Cheese

  • 8 oz. (about 2 cups) elbow pasta (I used whole wheat)
  • 8 oz. (about 2 cups) shredded cheese (a sharp cheddar is great)
  • 1/2 cup plain greek yogurt (I love Chobani)
  • 2 cups fresh spinach
  • salt & pepper, to taste
  • 1/4 tsp. onion powder
  • 1/4 tsp. garlic powder

Cook the macaroni according to the package’s instructions (about 8-10 minutes), until al dente.

Place the spinach leaves in the bottom of a strainer, and pour the pasta over top to drain and wilt the spinach. Save about 1/2 cup of the pasta water. Return the cooked macaroni and wilted spinach to the pot.

Add about 1/4 cup of the reserved pasta water to the pot, and stir in the cheese until melted. Stir in the greek yogurt, onion powder, garlic powder, salt, and pepper, until smooth and creamy. Stir in the remaining pasta water to thin, if necessary. Serve immediately.
