I love comfort food and nothing says comfort food like recipes with whipping cream. Here’s a recipe with chicken, mushrooms and of course, whipping cream. How do you decide what to make for dinner? Do you flip to the Food Network for ideas? Look through cookbooks? Scroll through Pinterest?
In this case, my friend Megan gave me the idea last night and I had every ingredient in the fridge to make it without having to run to the grocery store.
Chicken with Creamy Mushroom Sauce
- 1 pound of fresh mushrooms, sliced (I used button)
- 2 tablespoons butter
- 6 chicken breasts
- 1 & 1/3 cups whipping cream ( I used half chicken broth )
- 1 tsp soy sauce
- 1 tbsp dijon mustard
- Dash paprika
- 1/4 teaspoon ground black pepper
Pound the chicken breasts to 1/8 inch thick. Reserve. Or, slice the chicken breasts into thin strips.
Heat 2 tablespoons each of the butter in a skillet. Add the mushrooms and saute until tender, about 5 minutes.
Add the chicken and saute. turning once, until browned, about 4 to 5 minutes total cooking time.
Add the shallots or onion to the pan and cook, scraping the pan bottom with a wooden spoon to loosen browned bits, until tender, about 4 minutes.
Add the whipping cream and chicken stock, bring to a boil, reduce heat to simmer, and cook until the liquids are reduced by half. Stir in the cream and season to taste with salt and pepper. Add mushrooms and chicken and simmer to reheat.
