This week, I’ve decided to do a little meal prepping to get back on track after a fun-filled weekend celebrating a birthday with birthday cake and ice cream galore! I prepared a little something that I can grab and go whether it be for lunch or for dinner. This recipe is really just a base idea for something you can customize with whatever your favorite veggies are, or what ever you need to use up in your fridge!

Ingredients

1 lb of ground turkey
1 cup quinoa (uncooked)
1 onion and/or peppers
2 bags frozen veggies (I used peas, carrots, corn, mushrooms and brussel sprouts) you can get creative and use almost any vegetable or green that you have in your fridge

Instructions

Brown your ground turkey in a large pan with a drizzle of olive oil and some salt and pepper. Throw in a little bit of chili powder, paprika, and garlic. While the meat is browning, follow the cooking instructions for your quinoa. When the meat is fully cooked, remove it from the pan, and add your onion and peppers. Once those have started to soften add your brussel sprouts and other vegetables of choice.

When the quinoa is finished cooking, add that to the meat and veggie mixture. Once everything is mixed together, you can use this as stuffing in stuffed peppers or stuffed squash, on top of a bed of spinach/lettuce, in a wrap or you can just eat it plain. I like to add a little spice by adding pepper jack cheese and some siracha. It’s very filling and great for leftovers. Enjoy!
