Happy Tuesday! The warmer it gets, the less time I want to spend inside blogging, hints my lack of blog posts this passed week. Lately, Jake and I have been craving healthier lighter meals, that require little to no cooking. For those nights when you don’t want to think about cooking, it’s a quick healthy option that keeps you full. Try these amazingly delicious lettuce wraps:
- 1lb ground chicken breast
- 1/2 onion, minced
- salt & pepper
- 2 garlic cloves, minced
- 2-1/2 Tablespoons soy sauce
- 2 teaspoons siracha (or more if you like it hotter)
- 3 green onions, chopped
- 1/2-8oz can sliced water chestnuts, drained & chopped
- 1 cup sliced carrots
- 10-12 large outer lettuce leaves, rinsed and patted dry
