Crispy Baked Avocado Fries & Pickles

It’s Monday again! How does it always seem to get here so quick? I have been under the weather all weekend but finally felt well enough yesterday afternoon to do a little cooking! If you love avocados and fried pickles as much as I do you don’t want to miss out on these healthy alternative! YUM!

Ingredients

  • 2 large avocados, sliced
  • 1/3 cup flour
  • Salt and pepper
  • 1 teaspoon chili powder
  • 2 eggs, beaten
  • 1 cup panko bread crumbs

Directions

  1. Preheat to 425 degrees.
  2. In 3 bowls set up an assembly line. One bowl with flour, salt, pepper, and chili powder combined. Second bowl with beaten egg, and the third bowl with panko bread crumbs.
  3. Place sliced avocado in flour mixture and lightly coat. Next dip in egg to coat and then panko. (Note, your hands will be a mess).
  4. Place avocado slices on a wire rack on a baking sheet and bake for about 20 minutes or until golden brown. Remove from oven and squeeze fresh lemon over crispy avocado fries.

  • 1/3 cup flour
  • 1 teaspoon hot sauce
  • 1 tablespoon worcestershire sauce
  • Salt and pepper
  • 1 teaspoon chili powder
  • 2 eggs, beaten
  • 1 cup panko bread crumbs

Directions

  1. Preheat to 425 degrees.
  2. Whisk the flour and eggs together in a small bowl
  3. Add the Worcestershire, hot sauce, garlic powder, cajun seasoning, and black pepper.
  4. Pour the panko into a shallow dish.
  5. Dip each pickle slice into the egg mixture.
  6. Press the pickles into the panko breadcrumbs and coat on both sides.
  7. Place the pickles on the baking sheet.
  8. Bake for about 10 minutes.
  9. Flip the pickles over and bake for an additional 5 minutes, until golden brown.

Serve with Spicy Mayo
