Chicken salad may not be the first thing you think of when you hear -8 degree weather but I promise this isn’t your usual sad deli-counter salad.This chicken salad has been in the making for quite a few years now. My mom gave me the recipe a couple of years back and I have been addicted ever since.

Ingredients:
•1 pound cooked chicken breast (chopped, diced, or shredded) I just used a can
•1 can crushed pineapple
••2/3 cup grapes, halved
•1/2 cup Greek yogurt or mayonnaise
•1-1/2 tablespoons freshly squeezed lemon juice
•1/2 teaspoon garlic powder
•Kosher salt
•Freshly ground black pepper
•Ciabatta bread, crossaint toasted, for serving

Directions:
1. In a large bowl, combine chicken, grapes, pineapple, sliced almonds if you prefer, Greek yogurt, lemon juice, garlic powder, salt and pepper, to taste.

Note: You can also serve this over baby spinach for a delicious lunch salad!
