I’ve always loved my crockpot, but feel like my love for it has been renewed here lately. With the cold weather settling in, I’m looking for new ways to use it so that I don’t have to subsist on frozen meals.
Jake and I spent our afternoon in Broadripple having lunch, walking on the monon trail and stopping at Kilroy’s to watch part of the football games. We had one of those weekends that was just solid awesome. The forecast suggested rain on and off all weekend but it cleared up Saturday and today was beautiful.
I threw this white chicken chili recipe in the crockpot before we left. When we got home, five hours later, dinner had practically made itself.
Easy White Chicken Chili
Prep Time: 5 minutes
3 boneless chicken breasts
1 can black beans
1 package cream cheese
1 dry ranch seasoning packet
1 can corn undrained
1 can rotel undrained
optional toppings: diced avocado, chopped fresh cilantro, shredded cheese, chopped green onions, sour cream, crumbled tortilla chips
Method
Add chicken, beans, corn, rotel, cream cheese and ranch packet to crock pot. Cook on high for 5-7 hours or until chicken falls apart. Serve warm with desired toppings.
