On weeknights, it’s always a struggle to make meals that are fast and easy yet still healthy. Hints all the turkey sandwiches I consume and how much use I get out of my panini maker. I have found that any combination of vegetables together on a baking sheet with some olive oil is a good quick option for a meal. Last night I threw together zucchini, mushrooms, asparagus, red potatoes & corn.
