Happy Birthday to my best friend, my rock,  my twin, the person who makes me laugh the hardest and shows me unconditional love and support. God could not have blessed me with a more wonderful mom, I am so extremely grateful! 🙂


Day Off.


Tuesday I had a half day so I spent my afternoon by the pool with Morgan and Kalyn. After a long day by the pool sipping on Coronas we went to Mass Ave downtown to check out Bakersfield a new tequila bar downtown.   We started our meal off with their guacamole and chips appetizer along with queso. The guacamole has a distinct lime flavor with large pieces of fresh avocado. The Queso was also delicious. When it comes to your entrée, go big or go home and get one of each taco wrapped with handmade tortillas. We also had their margarita served in a mason jar! 🙂




Ugly Bean Dip.

Salsa is one my all time favorite snacks in the summer and I love that it is so simple and fresh.  My mom always makes the ugly bean dip which I have finally mastered this simple recipe. It is great for bringing to cook outs.

1 can black beans rinsed and drained
1can Mexican corn drained
1 green pepper diced
1/4 cup chopped onions
1/4 cup cilantro chopped
2tbs lime juice
1 tsp garlic
1/4 tsp ground cummin

Combine all ingredients and leave in refrigerator overnight.


Day 3.


We started off our last day in Arizona with breakfast at Over Easy. This restaurant was featured on Diners, Drive ins & Dives and has a great menu to choose from. Jake ordered the Wolfpack which was 2 eggs bacon and cheese between layers of hashbrowns. It was a great way to start off our morning and cure our hangover from the night before.


After full bellies we headed back to the resort where they had zip lining set up. The zip line ran over the river and was offered from 10am-2pm on the weekends. It was $5 a person or $20 dollars for an unlimited pass. I was so excited, but a little skeptical since I have a fear of heights.  


This was the first time that I had ever gone zip lining before and Jake’s second time. They allowed two people to go at a time so Jake and I were able to go side by side. Somehow Jake jumped out further than me and finished a lot faster!


With so much sight seeing and adventure during the first two days of our trip we did our best to have a lazy Sunday relaxing by the pool before I had to head to the airport that afternoon. After breakfast and zip lining  we ordered some fruity drinks and headed to the pool to catch some sun. 

Between the exquisite property (complete with fire pits, hammocks, pools, tennis courts, slides, zip lining, golf ), the wonderful meals and excellent service, I would have been content to never return home.

Our trip to Scottsdale was incredible. The people, the pools, the desert, the food…I am definitely ready to visit again!


Day 2 Trip to Sedona.

Saturday morning our second day in Arizona we made the two hour drive to Sedona, Arizona. Sedona is most famous for its stunning red rocks, which were absolutely breathtaking and have formed the backdrop for many a western film. 

Sedona has spiritual importance and it reminded me of a spiritual/hippie town. This was my firt trip to Sedona, and I certainly can’t imagine it will be my last. 

On the drive up to Sedona we stopped at one of the rest stops an hour away from Sedona which was Sunset Peak. It was a beautiful spot and we were able to take a picture. 

The temperatures in Sedona were much cooler than other Arizona destinations, thanks to the higher elevation. We did the pink jeep tour scenic route that was a two hour off road tour of the red rocks. 

Carl, our guide with Pink Jeep Tours, was excellent: he continually provided us with interesting facts about all facets of life and history in Sedona while also managing not to wreck the Jeep. There were a lot of times I thought we were going to drive off the side of the mountain.

After the jeep tour we walked through all of the shops and had lunch at The Wildflower Bread Company. This place was delicious and reminded me of Panera Bread. I had the BBQ Chicken Salad and Jake had a meatball sub. It was great place to stop for lunch after our red rock adventure. 

After our trip to Sedona we enjoyed the pool for a couple of hours and then cleaned up for dinner at Ventura Grill in Scottsdale. After dinner they had a fireworks show at 9:00 at our resort. We sat on our balcony watched the fireworks and drank wine! 🙂

Day 1 Arizona Trip.

I still can’t comprehend how we managed to squeeze in so much food and sight seeing in just three short days.  With the time change in our favor, we arrived at the Pheonix airport at 6:45 Am giving us the entire day to explore.  Our first stop when we got off the plane in Arizona was Tempe where Arizona State University is located. We walked around the college town checked out the shops and bought a couple souvenirs. 

After walking through ASU we were ready for Mexican for lunch at Los Dos Molinos in South Phoenix. They served the hottest salsa I have ever had, my tongue was on fire! It was a quirky little place with a lot of fun decor. 

After our Mexican feast we headed North to Old Town Scottsdale for some shopping and a drink. We stopped at the Rusty Spur, one of Scottsdale’s oldest and last real cowboy saloon and listened to some cowboy music. They had cheap beer, live music and a great atmosphere with dollar bills hanging all over the walls.

We walked around Old Town Scottsdale for a couple of hours and checked out all of the shops. Shades of West: was packed full of goodies it could have taken me an entire hour just in this store to go through everything. There is the home-ware section, the clothing/shoes section, the food section (features tons of hot sauces, prickly pear cactus goods, spices), the jewelry section and the random sports clothing section.

One of my favorite things to do when the weather is nice is sit outside and dine somewhere with an awesome atmosphere. We stopped at Carlsbad Tavern for a drink on their amazing patio outside. The interior had a cool mining cave feel and the outside had a patio complete with misters, waterfalls and a river. 

After tons of driving around and exploring Arizona, Tempe & Old Town Scottsdale we headed to Princess Fairmont to check into our Hotel.  I couldn’t believe my eyes when we pulled up to the resort! 

The resort was absolutely gorgeous it definitely exceeded all my expectations. It was very luxurious with golf courses, five swimming pools, water slides, tennis courts, wellness center, restaurants, a spa and zip lining! 

They had so much to do that you wouldn’t even have to leave the resort since they offered so much entertainment. Our room was on the third floor with a great patio view overlooking the river and the golf course. We squeezed in a couple of hours by the pool on the first day before getting all cleaned up for dinner. 

Friday night we went to the Old Town Tortilla Factory another place with a great atmosphere and awesome outdoor seating. We stopped there for a drink and then had dinner at The Roaring Fork.  All of their entrees are cooked by wood fire, open flame grill or wood oven roasting. The green chili macaroni and cheese was to die for. The first day was amazing and I fell in love with Arizona right away. 

Cookie Dough Dip

Chocolate Chip Cookie Dough Dip

Last week we had a dip day at work on Thursday where everyone in the offices contributed a desert. One of my co-workers made this cookie dough dip that was amazing! A few simple steps and you have this delicious dessert.

1/2 cup butter

3/4 cup brown sugar

6 -ounces cream cheese, softened – You can use an entire 8 ounce package, but I like the brown sugar flavor to stand out.

3/4 cup powdered sugar

2 Tablespoons milk

1 teaspoon vanilla extract

1/2 teaspoon salt

3/4 cup mini chocolate chips, plus extra for sprinkling

Mix cream cheese and butter until light and fluffy. Add sugars.  Stir in vanilla, milk, and salt until combined. Stir in the mini chocolate chips.

Garnish with additional mini chocolate chips. Serve with animal crackers, vanilla wafers or graham crackers.
