Banana Muffins.

I love bananas but no matter what, I always have a few left over that brown too quickly. What is the best thing to do with brown, overly ripe bananas? Banana muffins, of course!

1 3/4 cups all purpose flour

3/4 teaspoon baking soda

1.2 teaspoon salt

3/4 cup sugar

1 1/4 teaspoons cream of tartar

2 eggs beaten

1/2 cup vegetable oil

2 ripe bananas, mashed

1 teaspoon vanilla

Combing first 5 ingredients in a large bowl; make a well in center of mixture. Combine remaining ingredients; add to dry mixture, stirring until moistened.

Spoon batter into greased muffin pans, Bake at 400 degrees for 18 minutes remove from pans. Makes about 1 1/2 dozen.

Delicious straight from the oven and slathered with butter, but also store great in a container for many days!
