What was I doing this time last year on April 20th? Well, the weather definitely wasn’t pouring rain and 50 degrees. I was indulging in the Mac Genie food truck with Kalyn and Morgan. I can’t wait for the weather to warm up so we can do that again this summer. And yes, this is another post about food.
Meredith and I went to the grocery store and she inspired me to get simple ingredients to make a delicious summer salad. We bought lettuce tons of fruits, fresh vegetables, avocados, corn, black beans & cheeses. Summer salads are one of my favorite dishes because of all of the fresh ingredients! Salads filled with bright flavors that require no cooking pretty much top my list. Here are my top favorite easy summer salads:
