Last night we went to Broadripple to cheer on the Boilermakers during the IU PU game. I think I was the only person in Kilroy’s with a black a gold shirt on.

Healthy Eating Preparation.

I’m not a huge fan of plain flavors especially original flavored oatmeal. I love sweetening things up and adding more flavor to my food. This morning at work, I whipped up some original oatmeal while spicing it up with blueberries, strawberries & peanut butter.

I am so tired of this rainy weather. I keep thinking the rain will let up , but it just keeps pouring.  It has been warm this week so it would be the perfect weather to run outside but I guess the treadmill will have to do until it stops raining.

Kalyn gave me an awesome healthy lunch idea over the weekend and this is my third day straight bringing it to work. I cut up a red pepper, green pepper & a cucumber, bought pocket thins from Kroger & roasted red pepper hummus.

As I’ve mentioned a time or two in the past, macaroni and cheese is definitely up there on my list of favorite foods.  In my mind, it’s pretty much the perfect comfort food.  I definitely love traditional macoroni and cheese but when I found this buffalo chicken mac & cheese I couldn’t resist! I made it on Friday and loved it!

BUFFALO CHICKEN MAC & CHEESE 1 lb. pasta 3 boneless, skinless chicken breasts, cooked & cubed 1 tbsp. flour 4-6 tbsp. butter 1 1/2 cups milk 4 oz. grated monterrey jack cheese {half a brick. plus more for topping} 1/3 cup sharply shredded cheddar cheese 1/3 cup buffalo wing sauce {Frank’s Red Hot is my favorite!!!} 1/3 cup Panko bread crumbs Ranch dressing, to taste

Here’s what you’ll need to get started… Cook pasta according to package directions, drain, and return to pot. While the pasta is cooking, heat saucepan over medium heat and add the butter. Add the flour once the butter is melted and bubbly. Add in the wing sauce, I used a lot more than what this recipe called for. Lightly grease a 9×13 baking dish and add the pasta & cubed chicken. Mix well so that the chicken is evenly distributed throughout the pasta. Pour cheese sauce on top. Now sprinkle with bread crumbs and extra cheese. Cook on 350 for 25 minutes 🙂

Latitude 39

This weekend we spent Friday night at the new Latitude 39 on 86th Street. It was a blast! It has a dine-in  movie theater, a dine-in live performance theater with a full-size stage with seating, bowling lanes, an HD sports theater, a main bar with a stage/dance floor, tons of video games &  a restaurant!

Certain foods simply make me happy and breakfast foods pretty much top that list. I saw this breakfast casserole recipe on Pinterest yesterday and thought it would be the perfect touch to a lazy Sunday morning, it turned out awesome! All you need is a roll of sausage (16 oz.), Ore Ida Potatoes O’Brien (28 oz), 1 cup of sour cream, 4 eggs and 2 cups shredded cheese. Brown the sausage then add the eggs, potatoes, sour cream and 1 cup of cheese. Bake for 20-25 minutes at 350 degrees!

Jean Jacket.

Some things are must haves in your closet – a great pair of jeans, a black cardigan, a white button-down. But for me, a jean jacket gets more play than just about anything else in my closet. Ever since I borrowed my mom’s jean jacket from Old Navy I have been mixing and matching it with everything in my closet.  It works well with basic tops, floral dresses in the spring as it does with colored jeans in January.
