Mexican Lasagna
- 1 lb. ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can refried beans (I used a black/pinto bean mixture that I made in the crockpot.)
- 1 package taco seasoning
- 1 1/2 cups salsa
- 1 can black beans
- 1/2 cup jalapenos
- Shredded Cheddar cheese (lots of it!)
- 8 corn tortillas
- 1 can of corn (drained)
Preheat oven to 350 degrees. Brown ground beef with onion and garlic. Drain. Add beans, taco seasoning and 1 cup salsa to meat mixture and heat through.
Line 13 x 9 baking dish with 4 corn tortillas {tear one in half}. Spread half of meat/bean mixture over tortillas. Then add cheddar cheese. Repeat, but before adding last layer of cheese. Top with black olives and sour cream after baking.
